Another great recipe for bone health is the Sweet Potato and Yam Stew with Kale. This recipe was created by OsteofitnessTM member Minal Akkad and is one of her preferred dishes.
Ingredients
- • 1 tablespoon oil
- • 1 medium yellow onion dried. • 1/2 to 1 Teaspoon dried chili flakes or chili powder
- • Optional: cumin, coriander, and turmeric (1/2 Teaspoon each)
- • 2 Inch piece fresh ginger.
- • 3 Minced, Garlic cloves.
- • 1 1/2 Pounds Diced, sweet potatoes (Yam alternative)
- • 1/2 Cup or a couple more, lentils – black beans, or red beans.
- • 4 cups vegetable stock line • 13.5 oz, Coconut milk.
- • One small bunch, kale, Chopped
Instructions
- Heat oil in a large pot (medium heat)
- Sauté onion, add chili flakes, coriander, turmeric, and cumin, stirring continuously.
- Add ginger and garlic for one minute. Then add sweet potatoes and lentils. Stir well.
- Pour vegetable stock and season with salt and pepper.
- Bring to boil and turn reduce to a simmer Partially covering the poor. After half an hour, when tender, add coconut milk, and kale.
- Continue simmering until kale is wilted. Take salt, pepper, and add to taste.
- Garnish with cilantro and lime. Enjoy!
