Ingredients
- 1 cup yellow moong dal Note: Soak for 1/2 to 1 hour. It is available in any Indian grocery store.
- 1 1/2 cup water, 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 tsp ginger garlic paste or freshly crushed
- 2 green chilies finely chopped
- 1/2 red onion chopped
- 1/4 tsp turmeric powder
- 1/2 tsp red chili flakes
- 2 cup baby spinach finely chopped
- Water to make dal consistency
- 2 tsp lemon juice, salt to taste
Instructions
- Rinse the moong dal until it runs clear
- Cook the dal in a pan with water adding little salt.
- In a separate pan heat the oil. Add cumin seeds — let it crackle a little bit.
- Add green chilies, and sauté onion for two minutes. or until onions are soft.
- Add ginger garlic paste — sauté for 30 seconds
- Add turmeric powder, red chili flakes and cook for another 30 to 40 seconds.
- Add chopped spinach leaves, mix and cook until spinach is wilted.
- Add cooked dal, salt as per taste, and some water making sure dal does not stick to the pan.
- Lastly add lime juice and mix well.
- Serve with rice, Roti or Naan
