
Ingredients
- 2 cups All-purpose flour – can substitute whole wheat flour
- 1/4 cup Rolled Oats
- 3/4 cup White sugar
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 3/4 tsp Salt
- 2 Eggs
- 1/2 cup Yogurt
- 1/2 cup Banana mashed
- 1 Apple grated (I chopped the apple into small pieces)
- 2 tbsp Milk
- 6 tbsp Butter melted
- 1 tsp Vanilla
- 1/4 cup Carrot grated – optional
- 1 cup Prunes chopped
- 1/4 cup Walnuts chopped
Instructions
Preheat oven to 400° and grease muffin tin. In a large mixing bowl, stir together flour, oats, sugar, baking soda, baking powder and the salt. In a separate bowl, whisk together the egg, yogurt, milk, banana, carrot, apple, melted butter and vanilla. Make a well in the flour mixture, add the egg mixture, prunes and walnuts and stir the batter gently until combined. Divide Prune Muffins batter evenly among 12 muffin cups. Bake muffins on the middle rack middle for 15-20 minutes until they are golden brown.
