
Ingredients:
- 4 Tablespoons Olive Oil
- 3 – 4 large potatoes or butternut squash
- 1lb carrots
- ½ – ¾ cup of prunes
- ¼ cup brown sugar
- ¼ cup honey
- Salt and Pepper to taste
Procedure
- Preheat oven to 400 degrees F
- Peel Potatoes (or squash) and cut into cubes
- Peel Carrots
- Chop into ¼ rounds
- In one glass pan toss in potatoes or squash with 2 teaspoons of olive oil and salt of your choosing.
- In another glass pan toss in carrot and prunes with 2 tablespoons of olive oil and salt.
- Roast for 45 minutes (toss after 30 min, if they start to brown, move to top rack)
- Mash potatoes (or squash)
- Mix with brown sugar and honey
- Add carrots and prunes, serve hot
