Another cheesy and bone-healthy recipe you can make is the Zucchini Cheddar Bites. Member Helen Robichard has found this recipe to be a great snack. Original recipe taken from the New Zucchini Cookbook.
Ingredients
- 2 cups unpeeled and shredded zucchini
- 1 teaspoon salt
- 3 cups all-purpose flour
- 1 tablespoon baking soda
- 1/4th teaspoon freshly ground black pepper
- 3 tablespoons cold unsalted butter • 1 cup shredded cheddar cheese • 1 large egg
- 1 and 1/2 cups buttermilk
Directions
- Preheat the oven to 400 degrees Fahrenheit
- Place zucchini in colander. Sprinkle with salt and let stand for 30 minutes.
- Squeeze zucchinis dry with hands and place into small mixing bowl. Amount will be reduced to about half a cup.
- Sift all dry ingredients together in large mixing bowl. Cut in butter.
- Add cheese, egg, buttermilk, and reserved zucchini. Toss with a fork to mix well.
- Place 24 spoons full of batter onto a well-greased baking sheet. Bake for 15 minutes.

Helen’s notes: For just two people, I halved the recipe for only 12 biscuits instead of 24. So I put in a rounded 1/2 cup of cheddar cheese and a rounded cup of squeezed dry zucchini (you know, just a little more of the calcium ingredients). They came out very light.
